Abstract
Field experiments were conducted in Saratov, Russia in 2000 and 2001 to investigate the blending value of high quality soft spring wheat cultivars selected from 36 cultivars: Saratovskaya 29, Saratovskaya 55, Belyanka, Yugo-Vostochnaya 2, Yugo-Vostochnaya 4, Albidium 42/98, Tulaikovskaya 5, Tulakovskaya 10, Tulakovskaya, Zolotistaya and Fiton 4/2. The evaluation was based on the valometric assessments of dough rheological properties. The maximum values of the mixtures with low proportion of improvers (30%) were noted in the breeding form Albidium 42.98 and in cultivars Tulaikovskaya 5 and Fiton 4/2; average proportion (50%) was observed in Albidium 4/98, Tulaikovskaya 5, Tulaikovskaya 10, Fiton 4/2; and high proportion (70%) was observed on Tulaikovskaya 5, Tulaikovskaya 10 and Yugo-Vostochnaya 4. With increasing amount of flour from improvers in the mixtures, the differences between them and the mixture decreased regularly. The effect of blending of flour produced from the grain of high quality spring cultivars mixed with low technological qualities was low and was observed only with the high additions of improvers. Higher the valorimeter index resulted in an increase in the effect of improvement. The cultivars with the highest mixing strength were Albidium 42/98, Tulaikovskaya 5, Tulaikovskaya 10 and Fiton 4/2 with mixing strengths of 18.5, 17.0 and 20.0, respectively
