About Hard Red Spring Wheat Survey Data
These files contain data collected as part of the annual survey of
hard red spring (HRS) wheat conducted by the Cereal Science Department
at North Dakota State University. This survey is undertaken to
ascertain and provide quality estimates of HRS wheat grown in the
northern Great Plains of the U.S. Data for the respective 22 crop
reporting districts (CRD'S) are simple averages of assay results for
samples collected within that district. State averages are adjusted,
based on the past 3-year production within the respective state.
Regional averages are also adjusted, based on the previous 3-year HRS
production throughout the entire region.
A total of 1282 HRS wheat samples were obtained from growers or local
elevators during the time period between July 26 and September 26,
1994. These samples reflected the condition of the grain at their
point of origin and not necessarily the quality available in
commercial markets. Individual samples are blended to form composites
which represent the respective crop reporting districts.
Financial support for this survey is provided by the Minnesota Wheat
Research and Promotion Council, the Montana Wheat and Barley
Committee, the North Dakota Wheat Commission, the South Dakota Wheat
Commission, U.S. Wheat Associates.
These data are replications of data presented in the published report
and may be used freely. We ask for credit for the information if it
is further duplicated and distributed.

K-WT = 1000 Kernel Weight, g
DIST-M = Kernel Size distribution, % passing through 2.92 and
retained on 2.24 mm sieve.
DIST-L = Kernel Size Distribution, % retained on 2.92 mm sieve
PROT = Protein Content, % (wheat: 12 % moisture basis; flour: 14%
moisture basis; AACC 46-30)
ASH = Ash Content, % (14% moisture basis; AACC 08-01)
FN = Falling Number, sec (AACC 56-81B)
SED = Sedimentation, mm (AACC 56-63)
ABSN = Farinograph Absorption, 14% moisture basis
MIX TIME = Time (min) to Farinograph peak
MIX TOL = Farinograph Mixing Tolerance, min
MTI = Farinograph Mixing Tolerance Index
CLS = Farinograph classification. Scale 1= very weak, 8 = very
strong.
EXT = Extensigraph extensibility (cm) after 45 min rest
RES = Extensigraph resistance (cm) to extension after 45 min rest
AREA = Area under extensigraph curve (cm2)
P = Alveograph P value
L = Alveograph L value
W = Alveograph W value
BK-ABSN = Water required for optimum dough, as % of flour
DOCHAR = Dough handling characteristics, (1 = poor, 10 - excellent)
VOL = Loaf volume (cc) by rapeseed displacement
GR&TX = Loaf crumb grain and texture (1 = poor, 10 - excellent)
CMB CLR = Crumb color, (1 = poor, 10 - excellent)
CST CLR = Crust color, (1 = poor, 10 - excellent)
SYMM = Symmetry, (1 = poor, 10 - excellent)
